The Process

During crushing and destemming, sulfur is added to prevent oxidation and microbes activity. After pressing, the wine is usually clarified by filtration. Fermentor sanitation is done before fermentation and unwanted solids and yeasts are later removed through a physical process. Fine-tuning and tweaking of flavor, body and stability are done by adding organic acids, sugars and natural colorant.
